Grilled Peaches with Whipped Cream and Caramel

Epicurious had this posted from Bon Appetit August 2003 Carey Paquette, Arlington, VA Too Busy To Cook? I did add my touch to it! Just in time for summer peaches.

SERVES 6 (change servings and units)

Ingredients

    Prepare barbecue (medium-high heat).
  2. 2
    Arrange peach halves, cut side up, on baking sheet; sprinkle peaches with sugar,cinnamon and nutmeg.

    Let stand until sugar begins to soften, about 10 minutes.
  4. 4
    Place peaches on grill, sugared side down.
  5. 5
    Grill until tender and slightly charred, about 4 minutes per side.
  6. 6
    Transfer peach halves to plates.
  7. 7
    Using electric mixer, beat whipping cream in bowl until peaks form; fold in 1/4 cup warm caramel sauce just until streaks appear.

    Spoon caramel whipped cream alongside peaches.
  9. 9
    Serve, passing remaining caramel sauce.

    Make sure you have really ripe peaches, and to be honest they didn't ought to have much firmness to them at all. The cream was a disappointment. And don't try using carb-free sugar as a substitute if you're cooking for a diabetic - it doesn't caramelise well at all!

    I mixed the sugar and spices in a bowl and dipped the cut side of peaches in it. Turned them cut side up on a plate and let them sit a few minutes. Then cooked them as per recipe. I served them just with a little vanilla ice cream and was quickly wishing I'd made more than a 1/2 peach per person. We all just loved them. Big KEEPER. And I will try the whipped cream & caramel when I have it on hand. Thanks.
