Grilled Garlic Tarragon Lobster Tails

This is a fantastic, low carb treat. Different and delicious with only 2 grams of net carbs per tail. It is very simple to make, even for a beginner, yet sure to impress. Great for people who are not low carbing as well! Adapted from the Atkins Calendar.

SERVES 2 (change servings and units)

    Preheat Grill.
  2. 2
    Remove the soft part of Lobster Tail with scissors.
  3. 3
    Hit shell lightly with a mallet to make it lie flat.
  4. 4
    Melt butter in saucepan and add garlic, ginger, tarragon, mustard and salt.
  5. 5
    Spoon some of the butter mixture over tails and reserve reamining.
  6. 6
    Let stand 20 minutes.
  7. 7
    Grill lobster 4 inches from heat for 10 - 15 min with meaty side up, basting frequently with reserved butter mixture.

Yummy! This is so simple and very good. I love fresh tarragon and ginger so this was right up my alley. I loved step 3 and had fun relieving the stress of the day. Thanks Leslie for a great meal. Made for ZWT5 2009.

    Great simple recipe! I was feeling a little lazy so rather than use a saucepan mixed the butter and other ingredients in a cup and gave it 20 seconds in the microwave. That was just enough to melt the butter after which I mixed well and gave it time to infuse. I was using frozen lobster tails out of their shell so used about half the butter which made the mixture stick a little better, and just used a slightly reduced cooking time on the grill. I had along Garlic mushrooms with grilled aspagarus, cherry tomatoes, eggplant, squash and capsicum and found it all most enjoyable!
