Grilled Garlic Potatoes

This is a variation of a recipe that I found on the net. It is a quick and easy side dish for almost any grilled meal.

SERVES 4 (change servings and units)

Ingredients

  • 6 medium red potatoes, thinly sliced
  • 1 large vidalia onion, sliced
  • 3 tablespoons butter, sliced
  • 3 cloves roasted garlic, minced
  • 1 teaspoon chopped fresh parsley
  • salt and pepper

Directions

  1. 1
    Preheat grill to medium-high heat.
  2. 2
    Arrange potato slices, onion slices and butter on a large piece of aluminum foil.
  3. 3
    Top with roasted garlic, chopped parsley, and season with salt and pepper.
  4. 4
    Tightly seal potatoes in foil.
  5. 5
    Place on preheated grill and cook 20 minutes, or until potatoes are tender.

    Delicious! My first attempt at grilled potatoes and am very glad I tried this recipe. I used peeled russets, fresh garlic and added shredded colby jack cheese on top. These look good and taste even better! Thanks!

    Excellent! I added some dill, parsley and other 'pretty' herbs. I also made a cheese sauce and fried bacon. I crumbled the bacon topped the potatoes after adding the cheese sauce. Yummy....
