Grilled Chile-Cheese Toasts

Simple. Delicious. Fun. Fast. Comfort Food. What a great twist on the grilled cheese..yum.

SERVES 4 (change servings and units)

    Preheat the broiler. In a large bowl, mash together all of the ingredients except the bread.

    Arrange the bread slices on a baking sheet and toast them until lightly browned. Let cool slightly, then turn the toasts over and spread the mozzarella cheese mixture on top. Broil for 3 to 5 minutes, until melted and lightly browned. Serve hot.

    A great recipe here, just what I was looking for, quick, fast, items on hand and OH-SO-TASTY! I made for two, and I can't tell you what I loved more. the jalapenos, the cilantro, the cheese? Any and all of it! You won't want to change anything, this is delish snack and so great, so fast. Great and thanks so much! Made for Everyday is a Holiday July 2009

    Great blend of flavors! I added some cumin and chili powder and used smoked mozzarella. Thanks for sharing!

    We enjoyed this for a tasty lunch. The one thing I'd have changed is the cheese...we thought it would have been better with some cheddar added, or a cheddar/jack combo, instead of the mozzarella. But otherwise great flavors, and it came together easily for a quick lunch.
