Green Eggs & Ham

Recipe #65157 | 4 min | 2 min prep | add private note

By: Cindy Lynn
Jun 19, 2003

When my kids were all little they loved Dr. Seuss, and his book Green Eggs and Ham was their favorite. In an effort to get them to eat eggs, I came up with the idea of making 'Green Eggs & Ham' for breakfast. They loved it and would often demand it for breakfast. Just multiple the ingredients by the number of small children you are serving. If the kids are a little older, then you can double serving sizes. This recipe also served as a good 'science experiment' when the kids were learning about primary and secondary colors...after-all, yellow and blue make green! I look forward to the day when I'll be able to make 'Green Eggs & Ham' for my grandkids.

SERVES 1 (change servings and units)

Ingredients

  • 1 egg
  • 1 teaspoon milk
  • 1 drop blue food coloring
  • 1 tablespoon ham, diced small

Directions

  1. 1
Crack egg into a small bowl.
  2. 2
Add milk and blue food coloring.
  3. 3
    Whisk together.
  4. 4
    Add diced ham.
  5. 5
Pour into preheated and greased skillet.
  6. 6
Stir a couple times while cooking until water begins to separate from eggs (this is moisture from the milk).
  7. 7
Serve immediately with hot toast and jelly and juice.

Hi Cindy, I just have to tell you that I have made these colored scrambled eggs for my grand-kids and they just loved them! I have made them in many colors such as purple, red, orange, blue, green, pink and believe it or not Black! :o Yes my little grand-daughter loved to help me mix them up! That is the only way she would eat her scrambled eggs,is if we made them a pretty color! So anyone who has trouble getting your young ones to eat their scrambled eggs, just add a bit of color! Thanks Cindy for letting me tell you about my wee ones. Cheers, Nancy Wilson Northeast,England
