Green Beans With Garlic and Breadcrumbs

From Vegetarian Times. One of the numerous useful ways to use up day old bread.

SERVES 4 (change servings and units)

Ingredients

Directions

    In a pot, steam the green beans until tender-crisp. Set aside and keep warm.
  2. 2
    Heat the olive oil in a large saute on medium-low heat. Add the garlic and cook for about 2 minutes. DO NOT allow the garlic to burn!
  3. 3
    Stir in the bread crumbs and pepper. Cook for about 2 minutes more, pressing down on the bread crumb mixture with a spatula to allow it to become crispy. Again, be careful not to burn.
  4. 4
    Stir in the green beans and toss to coat. Season with salt and pepper and serve immediately.

Good taste. I had a hard time getting the breadcrumbs to adhere to the green beans. Most of the bread crumbs ended up on the bottom of the plate.

    I very much enjoyed this recipe,using fresh green beans, but it just didn't do it for DH who had a texture problem with it. Sometimes I swear he is worse than a child lol. The resulting leftovers which I ate the next day were soggy so this is definitely a recipe best eaten immediately after preparation. Thank you Cookgirl for sharing the recipe.

    I'm always looking for new ways to cook green beans, as they grow so well here and aren't overly popular with the kids and hubby...this was delicious and easy. Thanks for a recipe my kids will eat!
