Green Beans With Cashews

This comes from America's Everyday Diabetes Cookbook. A nice change of pace.

SERVES 4 (change servings and units)

Ingredients

Directions

    Place green beans in a pot of boilling water and cook for 5 minutes.
  2. 2
    Drain beans and immediately place in a bowl of ice-cold water, drain and set aside.
  3. 3
    In a large skillet, heat olive oil over medium-high heat for 30 seconds.
  4. 4
    Add onions, cashews, salt and pepper.
  5. 5
    Stir-fry for 2 to 3 minutes or until onions are softened.
  6. 6
    Add the cooked green beans, raise heat to high, stir-fry for 2 to 3 minutes or until beans feel hot to the touch.

    Take care not to burn the cashews during process.
  8. 8
    Transfer the beans to a serving plate and garnish with chopped parsley.
  9. 9
    Serve.

Very good and easy. I had a bunch of fresh green beans from my dad, had to use them in a creative way. The green beans were the star of my meal. I served them with simply seasoned grilled chicken breast and the 90 second garlic rice. Easy and quick, not to mention good for you. I did think something was missing, so I added a few tablespoons of lemon juice and extra salt. Thanks for posting!

    These are really good, my DH loves green beans and Im always looking for a new twist on them. I like the texture diffence with the added cashews. I did add a clove of minced garlic cause I just LOVE garlic LOL Thanks for posting Karen

    I'd give this 10 stars if I could. This is definitely not boring green beans. Thoroughly enjoyed the mix of pepper and cashews. Who knew? I cut the oil back to 1 1/2 tsp and thought that was plenty in a nonstick pan. I recommend you don't skip the fresh parsley, it really added to the flavor.

    very easy side dish, the kids loved the cashews in the mix. i threw in some mushrooms, i needed to use them up, and i used vidalia onions because they're in season and i can't get enough of them.
