Greek Oven Roast Potatoes

These potatoes have so much flavor and taste to them, they are delicious!!

SERVES 4 -8 (change servings and units)

Ingredients

  • 4-6 medium potatoes, quartered (skins on or off, your choice)
  • 1/4 cup mazola oil
  • 1/2 cup butter, melted
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. 1
    Preheat oven to 400 degrees.
  2. 2
    In a large pan, lay quartered potatoes so they barely touch one another.
  3. 3
    Combine butter and oil in a bowl and mix with a fork.
  4. 4
    Pour over potatoes.
  5. 5
    Toss potatoes around until very well coated with oil and butter mixture.
  6. 6
    Be sure potatoes are spread around evenly in the pan.
  7. 7
    Allow to roast, for 20 minutes.

    Sprinkle salt, pepper, and oregano all over potatoes.
  9. 9
    Toss around with a spatula, spread potatoes around evenly again.

    Roast potatoes again for 15 minutes more, or until golden brown.

    If you like you can also add some lemon juice also.

    Delicious! I soaked the potatoes in about 3/4 cup lemon juice and 1/2 tablespoon minced garlic for half an hour in a ziploc bag, turning over midway, before cooking. I recommend halving the butter and oil listed on this recipe. After adding the seasoning, it took about 25 more minutes in the oven. I finished off by broiling on high for one minute to add that extra crisp. Totally amazing. Thanks for such a tasty recipe!

    Crisp with nice flavour. I did marinate the cut potatoes in lemon juice for about an hour before cooking. Next time I might just add some garlic, only because we love the stuff. LOL. This is a keeper for us. Cheers JenT

    Well Done Dana. I prepared these last night to go with a roast chicken and it really set the meal up nicely. I did marinade in a little fresh lemon juice and added a few cloves of minced garlic. The results were crisp flavorful potatoes. DS asked that I leave the pan out so he could finish them off. I will be making these often as he is hard to please. Guess next time I will have to make more. You done good!
