Greek Chicken Salad Pitas

These pita sandwiches are packed with flavor. They are great to serve for guests for a nice lunch. You can often buy kalamata olives from the deli section of the grocery store, the gourmet food case, or with the regular olives. If you need to save time, buy precooked, cubed chicken.

SERVES 4 , 8 filled pita halves (change servings and units)

Chicken salad

Dressing

To Serve

Directions

    Combine all salad ingredients in large mixing bowl.

    Combine dressing ingredients in small bowl.
  3. 3
    Add dressing to salad mixture and stir well.
  4. 4
    Cover and chill in refrigerator for at least an hour.
  5. 5
    To serve, line each pita half with lettuce leaves and 1/2 cup salad.

This was really tasty, quick and easy! My kids even liked it! I did have to substitute dried parsley for the fresh, but it was fine. Thanks for a new family favorite!

    I actually really liked this, TRUE! Had some chicken had to use up too! Didnt quite have 3 cups, mine came out creamy, but was me, OOMPA!!! Good Greeg chicken recipe! Note: Used vanilla yogurt, TRUE! Also added roasted red peppers for colour too!
