Quick, simple, delicious and healthy!!!! Serve with basmati rice and steamed green beans for a colourful treat, pleasing to both eye and palate. Torn from a magazine, which I only realise now, does not print its title on every page , sorry! I know it was a fashion magazine, tho! (brought home by my husband ) He loves fish, loves this recipe.

SERVES 4 (change servings and units)

    Pre-heat the oven to 180c/350F.

    To make the sauce :

    Heat the oil in a non-stick pan over a medium heat, and saute the onion for five minutes.

    Add the tomatoes, paprika, sugar and cumin/coriander (or both :-)), turn up the heat.
  5. 5
    and let it bubble away for ten minutes until you have a nice thick sauce.
  6. 6
    Season to taste.

    Lay the fish in a baking dish in a single layer.
  8. 8
    Spoon the tomato sauce over the fish, and then crumble the feta cheese over the sauce.

    Sprinkle the olives on top.
  10. 10
    Place in the oven, and bake the fish for 15 - 20 minutes, until the fish becomes translucent and starts to crumble.

I really enjoy the flavors of the Mediterranean and this fish was no exception. Cod fillets were used for the fish with kalamata olives and Greek feta this made a delicious dinner. Made for Aussie Swap

    Oh my what wonderful flavours! This was enjoyed by us all, so easy to put together and tastes great. I served with mashed potatoes and steamed broccoli. Delicious.

    Simple, tasty, easy to make, healthy - what more could you ask for! I used fresh Roma tomatoes since they are cheap at the moment but I would make this with canned tomatoes at other times of the year. We had it with steamed cous cous and a green salad. Quick and simple meal - and delicious. Thanks.

    Reviewed for Aussie Forum Edition 8 Recipe Tag Wonderful! We added kalamata olives and Greek fetta. I used Snapper fillets -almost 1 kilo in the 4 fillets. I placed the fish in the oven with the tomato topping for 10 minutes...then added the fetta cheese and olives and cooked for another 15 minutes. The sauce had great flavour and everyone totally enjoyed their meals. Thanks for a great fish recipe that was easy and delicious. Photos also posted
