Grapefruit and Grenadine Marmalade

Recipe #86577 | 1½ hours | 25 min prep | add private note

I love this marmalade - the tart bitterness of the grapefruit juxtaposes the sweetness. This is ideal on a slice of buttered breakfast toast (with tea).

2 1/2 cups (change servings and units)

Ingredients

Directions

  1. 1
Using vegetable peeler, remove peel from 2 grapefruits (coloured part only) in long strips.
  2. 2
    Cut peel into fine julienne.
  3. 3
Add peel to large pot of boiling water and cook 5 minutes.
  4. 4
Drain, rinse under cold water, and drain again.
  5. 5
    Peel remaining grapefruit.
  6. 6
Remove white pith from all the grapefruits.
  7. 7
Working over large bowl to catch juice, cut between membrane of grapefruits with small sharp knife to release segments.
  8. 8
    Mix segments with grapefruit juice.
  9. 9
    Mix in lemon juice.
  10. 10
Combine grapefruit mixture and 6 cups water in heavy, medium saucepan.
  11. 11
    Boil 30 minutes.
  12. 12
Add sugar and peel and stir until sugar dissolves.
  13. 13
Continue boiling about 30 minutes, stirring frequently and reducing heat if necessary to prevent sticking.
  14. 14
Check the marmalade at this point.
  15. 15
Drop 1 tblsp of marmalade onto a chilled saucer and put in freezer.
  16. 16
If it wrinkles when pushed after 2 minutes of cooling, then it is done.
  17. 17
    Mix in grenadine.
  18. 18
Spoon hot marmalade into hot, sterilized jars, wiping rim of jar clean.
  19. 19
    Seal tightly.
  20. 20
Cool to room temperature and refrigerate for up to 3 months.

Made this on Sunday and it is pretty good! I tripled the recipe and zested the peel rather than sliced it because I wanted fine-cut marmalade. The grenadine gave it a great pinky orange colour and I got just over 7 cups of marmalade.

This is wonderful! I used red grapefruit and got beautiful tangerine coloured marmalade. I had a bit of a panic when the lovely looking lemons I'd bought didn't yield enough juice. But I tied up all the pips, pith and unused rind in a muslin bag and added it to the pan, just to make sure there was enough natural pectin for the marmalade to set. I'll be making this again!

Edit: Since I have made this several times, I think that I should change my review to 5 stars. I just love it. Thanks! ***My Mom sent us a box of grapefruit for our anniversary. After a while, I started looking for something to do with them! Since my dh loves grenadine, thought I would try this. It turned out lovely. This was my first time making marmalade. I later used some of the marmalade to make Orange Marmalade Cookies which turned out very well. Thank you very much for a lovely recipe.
