Gnocchi With Chicken Sausage, Bell Pepper, and Fennel

From Cooking Light. April 2008. Trader Joe's has the most wonderful chicken sausages that would be perfect for this dish.

SERVES 4 (change servings and units)

Ingredients

Directions

    Cook the gnocchi according to package directions, omitting salt and fat. Drain the gnocchi in a colander over a bowl, reserving 1/4 cup cooking liquid. Keep gnocchi warm.
  2. 2
    Heat 1 teaspoon olive oil in large nonstick skillet over medium-high heat. Add sausage to pan; sauté 3 minutes or until lightly browned, stirring frequently. Remove sausage from skillet using a slotted spoon.

    Heat remaining 1 teaspoon oil in pan. Add fennel, bell pepper, and onion to pan; cook 13 minutes or until tender, stirring occasionally.
  4. 4
    Add sausage, gnocchi, cheese, black pepper, and reserved cooking liquid to pan; cook 1 minute or until cheese melts, stirring constantly. Remove from heat; stir in parsley.

We were really happy with this recipe. The gnocchi is hearty and the sausages and veggies are earthy, but have bright flavors. This was a simple dish that would work well on our hectic weeknights.

    This recipe was very good. I am not usually fond of gnocchi as it feels like a dead weight in my stomach - but this dish was very tasty. I used regular sweet italian sausage and threw in some chopped zucchini. My family really liked this meal.

    I made this last night from the Cooking Light magazine and thought I would check ZAAR this morning to see if this recipe had already been posted… And there it was! I thought this recipe was easy to make and very tasty. I omitted the bell pepper (personal preference) and had to use chicken apple sausage. I loved the creamy Asiago sauce; adding the cooking liquid really brings this dish together. Thanks for posting.
