YUMMY! The batter will look thin, too thin, but its just fine! I was a little worried at first, but I tried one out and it was great!

I have just started eating GF free because I feel so much better when I do and it helps with my need to lose weight. I made this for breakfast this morning for me, DH, and 2 boys. Everyone really enjoyed it. I added blueberries for the boys. Nobody knew the difference. And, it did make 5 waffles in the belgian waffle maker. Thanks for such a good GF recipe.

We LOVED these waffles!!! The waffles were so light & slightly crisp - yummy eaten plain or slathered with butter & maple syrup. Thank you E Bennett for posting this fabulous recipe! My mom, my 4 children & I were treated to the best breakfast this morning!! A few changes were made according to ingredients I already had on hand. I used corn starch instead of potato starch & a mixture of half & half, coconut milk & water. (Can you tell I have to make a grocery run?) Then, I realized after making a few waffles, I had left out the oil! I think the oil in the coconut milk & cream sort of substituted for the added oil the recipe called for. If I had only used milk, I might have had some "waffle sticking" going on...
This will be a regular breakfast treat at our house. Maybe my children & I can convert their "I don't care for waffles." daddy with this great recipe.

This is great! I have multiple food allergies and was able to make this work for me very easily. I used 1/2 the salt and made them dairy-free with diluted coconut milk. I left out the eggs because of an allergy and they still had wonderful texture. I also added about 1 cup of blueberries and 2T ground flax to boost the nutrition. My husband and son loved them as well! Thanks for a great recipe! Jen
