Ginger-Lime Marinade for Chicken

This marinade gives the chicken a fresh flavor. Easy to make and quick. Don't over cook the chicken but make sure it is done.The recipe makes 3/4 cup of marinade enough for 6 breasts or whole legs or 12 thighs/drumsticks. When you grate or zest the lime use the whole lime peel

Really yummy flavor, and super easy to put together. My food processor is broken so I just minced/diced everything up and whisked it together. I also added an finely diced jalapeno pepper to the mix for some spice. It tasted great after marinating 2 hours. I baked my boneless thighs in the oven at 375 for 45 minutes and it was super tasty. Served it over saffron rice. I added a lot more ginger than it called for as well, I love ginger!

    Pretty good marinade. I gave it 3 stars, my brother gave it 4. My 3 & 7 yrs. old didn't like it so much...ginger is an acquired taste I guess. Used boned pieces and followed directions, marinated it about 5 hours, grilled. Will make again for hubby. Thanks

    I have terrible luck with marinades but finally found one I can't screw up This is such a great simple recipe. I halved it and used 3 boneless skinless breasts and seared them in a stainless steel pan then finished in the oven at 350 for about 15-20 min. Very tender and lots of flavor. Thank you--I'll try it with kabobs next time!

    Very tasty marinade that I used for 3 large (bone in) chicken breasts. I served the chicken cold in a salad with mango and spinach. Yum! This combination of flavours is really very good. Thanks!
