German Pancakes

I enjoy a light thin pancake,hope you do too!

14 pancakes (change servings and units)

Ingredients

Directions

    Beat eggs with the milk in a medium size bowl.
  2. 2
    Add club soda and stir in the flour and sugar.
  3. 3
    Add salt and vanilla and stir until batter is smooth.
  4. 4
    Melt about 1/2 tablespoon of butter and 1/2 tablespoon of oil in an 8" skillet.
  5. 5
    When foam subsides, ladle enough batter to coat the bottom of the skillet thinly.
  6. 6
    Tilt the skillet from side to side to spread evenly.
  7. 7
    Cook until lightly browned on one side, then turn and brown lightly on the other side.
  8. 8
    When pancake is done, turn out onto a plate and spread with your favorite jam.
  9. 9
    Roll up and put into a baking dish and keep warm in a 200F oven until all the pancakes are done.
  10. 10
    Sprinkle with confectioners's sugar and serve.

Great recipe. I had this type of pancake way back in the 1940's. My Grandmother made them.I like them rolled up with lightly cooked blueberrys with some sugar.

    You are right! It is yummy! The first time I tried this was when I was in the 4th grade and one of my niece's friends, Gina Barkley's mom, made German pancakes for HER! I ripped a piece out of her plate, ate it, and remembered the way that "pancake" melted in my mouth! Until today, I had never known how to even make it! I followed your recipe and it came out EXACTLY how I tasted it years and years ago. It brought me back to my nieces old neighborhood in Salinas, California! I topped it with butter and sprinkled sugar and savoured it! Thank you!!!! JP
