Garlicky Portabella Mushrooms

Wonderful easy side dish, or us on top of pasta or steak. Adapted from Chef2Chef.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
    Sauté the mushrooms in olive oil until browned on one side, 4-6 minutes.
  2. 2
    Turn and add the garlic, salt and pepper.
  3. 3
    Sauté for another 2 minutes, add the parsley and cover the pan.
  4. 4
    Turn off the heat and serve immediately Garnished with a little chopped fresh parsley, if desired.

I've made this several times now and it is FANTASTIC!! I could eat this all day. I've made it exactly according to the recipe, and I've also tried it with a splash of red wine as one of the other reviewers suggested. That was great too and I think I'll keep doing that in the future. I usually serve this as a side dish with steak and Lemon & Garlic Spinach (Lemon & Garlic Spinach), but next time I may add enough red wine to make a sauce and use it as an entree over brown rice with the same spinach on the side. Thanks for such an easy and great recipe!

    I made sauteed this in olive and butter and added a splash of red wine. Delicious.

    YUMMY!! My daughter just finished making this. We did add 1/4 cup of burgundy wine the last two minutes and reduced it. Then some salt and pepper to taste and we had a wonderful light tasty meal. Sharon thank you for posting this recipe I know DD and I will be making this one again.
