Garlic Sweet Potato Mash

I don't like sweet potatoes because they always have brown sugar in them. But here a great tasting recipe without the sugar! It comes from the cookbook "Great Garlic Recipes".

SERVES 4 (change servings and units)

Ingredients

Directions

    In a large pan boil sweet potatoes until tender, drain.
  2. 2
    Meanwhile in the same pan add butter and saute garlic until lightly browned.
  3. 3
    Return potatoes to pan and mash until smooth and creamy.

    Add pepper (and salt if you want) and serve immediately.

This was really good and easy to make. The garlic flavor was very subtle, but in combination with the butter was delicious. Thank you for something to do with the lowly sweet potato besides fries and the sweet casserole.

    OH, WOW!!! This is the best ever way to eat sweet potatoes. I hate ruining the flavor and healthiness of sweet potatoes by adding all that sweet, sugary stuff. This is sweet potato and garlic Heaven!! I made this last night to go with baked pork chops. This is a great side dish for ANY meal (and also a good snack (as evidenced by not one bite remaining Hey when the midnight munchies attack, this makes a better snack than potato chips or nachos anyday!!! Will definitely be making again!!! Thank you Charlotte!! ~Manda

    I served these with Salmon that I bake in foil with tomatoes. Everyone loved them, except they were a bit dry at first. I used margarine instead of butter, maybe that was why. Anyway, I added a bit more margarine and some 1% milk. Great alternative to just baking them and serving like traditional baked russet potatoes, and also to mashed white potatoes which my husband is not allowed to eat. Will definitely make this recipe again. Thanks for posting. I would never have thought to pair sweet potatoes with garlic.
