We enjoyed this with our pulled pork sandwiches last night. I thought the sour cream was a bit over powering but that is just my personal taste. The next time I would cut down on the sour cream and add a little more butter. The cooking method was super easy and the potatoes were nice and fluffyThanks for posting

Yum! These were great! I made them with red potatoes and 4 cloves of garlic for extra flavor! I also put the sour cream in the microwave on 50% power for about 20 seconds to heat it up a bit so that it wouldn't cool down the potatoes too much. We loved these and will definitely be making them again!
