Garlic Lovers Mashed Potatoes

One of my favourite mashes, and worth the extra effort of preparing the garlic cloves first.

SERVES 6 (change servings and units)

Ingredients

  • 2-3 heads garlic, seperated into cloves (depending on your love of garlic)
  • 60 g butter
  • 1 1/4 kg potatoes, peeled and cut up
  • salt and pepper
  • 125 ml whipping cream
  • 3 tablespoons snipped fresh chives

Directions

    Bring some water to the boil and drop in the garlic.
  2. 2
    Boil for 2 minutes, drain and peel.
  3. 3
    Melt half the butter in a small saucepan over a low heat and add the garlic.
  4. 4
    Cover and cook for 20-25 minutes, shaking the pan often.
  5. 5
    Meanwhile, cook the potatoes in boiling salted water until tender-15-20 minutes.

    Drain well.
  7. 7
    Mash the potatoes, and return them to the pan with the remaining butter, salt and pepper.

    Mash the cooked garlic with a fork, and stir in the cream, heat this mixture, then beat it into the potato mix.

    Fold through most of the chives-reserving a few for garnish-and serve.

Well in the process of making this the DH informed he doesn't really like garlic in his mash but he after eating this he thought it was o'kay (consider high praise) and the rest of us enjoyed immensely. For 4 I used about 850g of potatoe, 60g butter, 2 heads of garlic, 100ml whipping cream and garlic chives fresh from the the garden. Thank you team mate in Swap #26 March 2009 in the Aussie forum.

    I loved this recipe Jan and so did the garlic lovers in this family. This mashed spud is so creamy and I loved the addition of the garlic and chives. I followed as written, except I cheated and boiled the garlic with the potatoes! This will be a great recipe for winter. Thanks Jan

    A must-add for the cookbooks of all garlaholics. While the garlic was cooking, I sauteed a chopped sweet onion until it was turning brown and mixed it in with the spuds. Delicioso!

    Steps 3 & 4 I use 1 tsp of butter & 2 tsp of minced garlic (in the jar garlic) & sautee until golden brown. This is helpful if your limited on time
