Garlic-Herb Pita Toasts

    Cooks Tip: For the best results, use a baking sheet that is not too dark for this recipe; otherwise, watch the pita bread carefully as it burns easily.

    Preheat oven to 500°F.
  3. 3
    Separate each pita quarter into 2 pieces.
  4. 4
    Arrange in a single layer, rough side up, on an ungreased baking sheet.
  5. 5
    Brush evenly with the oil.
  6. 6
    In a small bowl, combine the parsley, chives, and garlic.
  7. 7
    Using your fingers, distribute the herb mixture evenly over the pita quarters.
  8. 8
    Sprinkle evenly with coarse salt.

    Bake on the top rack of the oven for 3 to 5 minutes, or until the pita quarters are nicely toasted.

    These were very easy to make. I think next time I will double and also add some red pepper flakes. Thanks engrossed. Made for Best of 2008 Cookbook Swap.

    Excellent, both warm and at room temperature, so, as Engrossed suggested, great for a healthy, flavoursome snack! Ideal, therefore, for lunchboxes. I know I'll be taking some to work whenever I've made them, and I'll certainly be making them again. I followed ~Nimz~'s suggestion of doubling the herbs and added an extra clove of garlic as well. Really easy to follow instructions and quick to make. Thanks for sharing this super recipe!

    These were so good. The herbs were great, but I think doubling the amount would have been even better. Thanks Engrossed. Made for SSC Pet Parade.
