Garden Salad With Cranberries, Pine Nuts, and Bacon

A fresh salad with lots of good toppings on it, all of my favorites. Nice enough to serve to guests, and simple enough to serve every day.

SERVES 4 -5 (change servings and units)

Ingredients

Directions

    Whisk together vinegar and oil and add salt, pepper and mustard until it is well blended.
  2. 2
    Toss with the baby greens or mesclun until the leaves are nicely coated.
  3. 3
    Toss again with the tomatoes.
  4. 4
    Place salad portions in bowls, garnish with a small amount of red onion, sprinkle with crumbled bacon, toasted pine nuts, and dried cranberries; serve.

    I made this salad for Easter and everyone enjoyed it. It was very easy to make and it tasted just fabulous. We will be having it often. Thanks for posting.

    This is a lovely salad. Full of great flavours and very refreshing on a hot summers day. Easy to throw together and looks beautiful. I used Canadian Bacon and added some sunflower seeds besides the pine nuts. It would also be good with fresh mango instead of dried cranberries and I think next time I'll add some finely minced jalapeno pepper to the dressing. Just for fun. Made for ZWT4

    Great salad!!! I loved the bacon and pine nuts in the salad. The salad dressing is delicious!!! I enjoyed this for a light lunch. I made as directed, but subbed green onions for the red and left the tomatoes on the side as some of my family doesn't care for them. Thanks Sue for posting!!! Made for ZWT4.
