Fruit and Lettuce Salad With Orange-Yogurt Dressing

This is my favorite way to dress up salad greens. You can add almost anything to the salad, but oranges and grapes are my favorites. The dressing is not overly sweet or tart-a nice balance. Even my 2 and 4 year olds will eat salad when prepared this way!

SERVES 4 (change servings and units)

Ingredients

  • 7 ounces torn salad greens (I use bibb and red leaf lettuce)
  • 2 large navel oranges, peeled and chunked
  • 1 cup red seedless grapes, halved
  • 1/4 cup raw pumpkin seeds or sunflower seed or sliced almonds
  • 4 slices bacon, cooked and crumbled (optional)

Dressing

Directions

  1. 1
    Whisk together all the dressing ingredients and refrigerate.
  2. 2
    Combine lettuces, oranges, grapes, bacon and seeds in a large bowl.
  3. 3
    Toss together and serve with dressing.

Very good, very light. Great Summer salad! Next time I'll skip the bacon as it was kind of a distracting flavor.

    A lovely summer salad. I love oranges and greens so this grabbed me off the bat. The real surprise was how nicely the grapes were with the dressing. Trying to cut back a bit so I skipped the nuts and bacon - while I did not miss the bacon, I'll add nuts net time. Had some extra dressing and served it with melons and strawberries — both would be a great addin to this salad. Thanks Kaarin!

    Loved this dressing. And as Kaarin noted almost anything goes as salad ingredients.Great recipe to have in a repertoire. Next time I may try using some frozen orange juice concentrate to reduce the thinning of the dressing.

    This salad is very versatile. I used prepackaged spring mix, cranberries and canned mandarin oranges which were rinsed and well drained. The yogurt I used was a thick homemade yogurt which resulted in a thick, tangy dressing.
