A light refreshing salad with a tangy dressing.

SERVES 6 (change servings and units)

    In a small bowl, whisk together the 3 tbsp of pineapple juice, olive oil, cider vinegar, dijon mustard, and tarragon; set aside.

    In a large bowl, mix together the pineapple chunks, mandarin oranges, ham, scallions, and dried cranberries.

    Line salad plates with salad greens. Divide the mixture over each plate of greens. Drizzle with the dressing.

    Sprinkle with optional sliced almonds if desired.
