Here's a refreshing fruit salad that is great in the Spring & Summer when fresh blueberries & strawberries are plentiful. It's great as a salad side dish, as a dessert, or as a topping on pound cake or ice cream!

SERVES 40 (change servings and units)

Ingredients

Directions

  1. 1
Cut into large bite-size pieces both the cantaloupe & the pineapple, then put them, along with the grapes, in a large bowl.
  2. 2
Combine marmalade & juices in a tightly covered small container, & shake to mix well.
  3. 3
Pour marmalade mixture over the fruit & let set overnight to blend flavors.
  4. 4
Just before serving, mix in EITHER blueberries OR strawberries.

It's not clear how much the dressing really added to the flavor, but it did impart a little gloss and some sweetness and protect the fruit from the air a bit for serving, and the end result was delicious. Hard to beat a bowl of mixed fresh fruit on a late summer afternoon, and we put it with barbecued burgers and Syd's Potato Salad by Syd.

WOW, what a great salad! The marmalade dressing was supreme! I used a reduced sugar marmalade and bottled juice since thats what I had on hand. This made a wonderful fruit salad!
