Friggione (A Side Dish of Potatoes & Tomatoes & Peppers)

A mix of canned tomatoes, potatoes, & peppers. A nice side dish to go with sausages, chops, steak, or chicken. As a vegetarian dish this makes a meal in a pan! NOTE: Do not hurry the cooking time as this tastes better as the liquid disappears and the mixture browns. Another of my 'Alison Holst' collection of made often dishes.

SERVES 4 -6 (change servings and units)

    Heat oil in large frypan. Non stick is best.
  2. 2
    Cut the potatoes into 1cm cubes and slice the onions and peppers.
  3. 3
    Add these to the hot oil and cover and cook over a low to moderate heat for about 20 minutes, stirring several times, until the vegetables are tender and lightly browned. Do not try to hurry this step by cooking on a high heat.

    Add the can of tomatoes and their juice.
  5. 5
    Cook uncovered for a further 15-30 minutes until the mixture darkens in colour and the liquid has reduced so that there is only a small amount left around the potatoes. Again do not use a high heat.

    Season to taste and sprinkle with the chopped parsley if using before serving.

    Serve Hot or warm reheating if neccesary if your meat is not ready at the same time.

This was good, but very time consuming. Next time I might add a few cloves of garlic for some extra flavour.

    This was simple to put together & tastes great. I didn't have any flavoured tomatoes so just added some Italian herbs to the mix. I did find that the liquid evaporated before the potatoes were fully cooked though & had to add some water for the remaining cooking time, no drama still tasted great, one we will make again, thanks!

    It was wonderful! The aroma of it cooking was making me so hungry long before it was ready. There is only me at home and I made the full recipe....so I shared it with my daughter and her family (lives upstairs). They loved it as well. It makes a very nice side dish...which is what I was looking for. Anyone who enjoys this dish as much as I.....you might want to try Italian Sausage Casserole . There are simularities between them, althought that recipe is a main dish recipe. I enjoyed them both.

    We enjoyed these Jen thank you. I made no changes apart from cutting my potatoes a little larger and extending both stages of cooking accordingly. I made a whole recipe for the two of us as I plan to reheat some diced roast pork in the leftovers tomorrow for our lunch. These would make an excellent dish for campers as you are getting a big serve of several veg in one pan.
