Fried Potato and Olive Sandwich

Definitely an "every now and then" type sandwich -pretty high in fat and calories but extremely tasty.

1 sandwich (change servings and units)

Ingredients

Directions

    Peel and slice potato into rounds.
  2. 2
    Boil until almost fork-tender and drain.
  3. 3
    Let cool down a little.
  4. 4
    Heat olive oil in fry pan (a generous amount) and fry potato until golden brown on both sides.
  5. 5
    Salt and drain on paper.
  6. 6
    Toast bread and slather each piece with mayo.
  7. 7
    Stack potatoes, olives and tomato.
  8. 8
    Drizzle a little balsamic vinegar over this.
  9. 9
    Crack some fresh pepper over the top of this and you're set!

slightly bland, and i love my potatos with a bit more flavor, especially if i am going to consume this much soluable fat

    This is my kind of sandwich. And I have ripe tomatos from my backyard to squish down in the mayo. Reminds me of summertime food when I was a child. Thanks, Carol.

    The ultimate comfort food. I microwaved a large russet and tossed it in a non-stick pan that was lightly greased. Hardly any oil needed. The balsamic vinegar really sets this off in taste.
