Fried Chicken Salad

I started making this salad for an easy lunch or dinner years ago after having one something like it at a restaurant named Grady's that is now closed. Adults and kids love it.

SERVES 8 , 4 as meals (change servings and units)

Ingredients

Directions

    Boil eggs and let them cool.
  2. 2
    Bake chicken tenders according to directions on package(I have also used leftover chicken in this).
  3. 3
    Tear or prepare lettuce as normal.
  4. 4
    Add cheese, tomato, and cucumber to lettuce.
  5. 5
    Cut chicken into bite size pieces and put into lettuce mixture.
  6. 6
    Dice eggs and add into mixture.
  7. 7
    Mix together ranch dressing and barbeque sauce(I use more than above since we love this dressing) and pour desired amount over salad.

    I do individual salads with this instead of mixing all together. The chicken tends to sink to the bottom.

    You can add whatever other veggies you want to it but my kids won't eat onions, peppers, etc so I skip them.

We loved this! It was better than any restaurant fried chicken salad that I've ever had. I left out the croutons and the cucumber because I was out of them. The dressing was so simple and tasted great! I used Sweet Baby Ray's sweet onion sauce. Fantastic! Thanks so much for posting!

    Thanks to I Recommend Tag Game I came across this recipe to try. My Dh does not care for ranch but loves this salad dressing. I would never of thought of putting ranch and barbecue sauce together. thanks for posting this recipe for us to try.

    This was a fabulous and refreshing lunch that my husband and I both thoroughly enjoyed! I did make one change though, we are not big fans of ranch dressing, so I subbed for a blue cheese dressing mixed with the BBQ sauce and man....it was the bomb!! Thanks for a great recipe! Made for PAC Spring 2007

    This is a delicious salad. The dressing is my favorite part - love the flavor of the barbecue sauce with the ranch dressing. I prefer romaine lettuce over iceberg and I also threw in some spinach for some more variety. Yummy! Even my kids enjoyed this since they love chicken tenders! Thanks for sharing this keeper, karenbear.
