French Dip Roast Beef for the Crock Pot

Recipe #103403 | 7¼ hours | 10 min prep | add private note

By: The Big Cheese
Nov 4, 2004

This is one of the best recipes I've come up with for beef roast. The cheapest cuts come out tasting like you slaved over a stove all day long. You can add potatoes and carrots to the recipe if you like, or shred it and serve it as a French Dip sandwich with the au jus juice from the crock pot on the side. If you are watching your sodium, use the lite soy sauce and it will taste just as delicious.

SERVES 12 (change servings and units)

Ingredients

Directions

  1. 1
Place roast in a 5-quart slow cooker.
  2. 2
Combine soy sauce and next 6 ingredients.
  3. 3
    Pour over roast.
  4. 4
Add water to slow cooker until roast is almost covered.
  5. 5
Cook, covered, on LOW for 7 hours or until very tender.
  6. 6
    Remove roast, reserving broth.
  7. 7
You may shred roast with a fork and serve on sandwich rolls with the broth on the side for dipping.

Made this using venison chuck roast. It was good but I wish I had read the reviews and left out the rosemary as some suggested. It really did overpower the taste somewhat.WIll make often, Very easy! Kids and Dh loved it!

Love this recipe. My sis-in-law gave me this recipe and said her source was Zaar — lost my handwritten copy and searched this out. TBC - thanks for posting. This make great faux philly cheese steaks!

I prepared this for my BF to bring to work for lunch. I put the beef in a thermos and packed two French rolls along with NurseDi’s Potato Salad (#25768) and some chips. He just called me and said it was an absolute 5 star recipe (he has NEVER called to give me a rating!). I thought it was a little too salty when I tasted the beef this morning but he said it was perfect (and he is very salt-sensitive). I used a cheap chuck roast that was on sale and it really had an incredible flavor! I left out the rosemary (all out) and added a touch of minced garlic. Thank you for a great recipe!

This was wonderful!! The only change I will make next time is to add extra garlic and leave out the rosemary...it seemed to over power the broth. But this was a great weeknight no fuss meal! I served it with a green salad and a few glasses of red wine. I will be making this again soon!
