SERVES 6 , 4 cups (change servings and units)

Directions

    Bring juice, water and salt to a boil in medium saucepan.
  2. 2
    Add remaining ingredients; reduce heat to low. Cover; simmer 25-30 minutes or until liquid is absorbed.

    Remove ginger and cinnamon stick; discard.

What a wonderful rice. So tasty and flavorful. It was perfect, just the right amount of spice and apple juice. It made a wonderful salad with fresh fruit. I also used some of it for little fried rice cakes which I added some chopped green apple and sweet onion too...soo great. Thanks for sharing this versatile recipe.

    Excellent! Easy and healthy too. Seasonings and timings are right on. I paired this with Pork Chops Braised in White Wine. Made for 1-2-3- Hit Wonders! Thanks KateL for posting another winner.

    Loved this recipe and I think it could be a really good jumping off point for any number of variations. I cut the recipe in half because there are only two of us and the only difference that made was having to keep an eye on the liquid levels to make sure it didn't boil dry too quickly. I liked the way that the apple juice coated the rice and made it sticky in a good way. We had it with steamed salmon which went well but I think the apple taste would really make it shine with a bit of pork. Made for Vegetarian swap.

    This rice is really outstanding. I saw the ginger in it and thought "Oriental". Boy was I off! I paired it with ginger and garlic stir fryed veggies and salmon. I will make this again with chicken that has an apple flavor element included. That match would be unconquerable! The apple juice delivers a much sweeter punch than I had expected and the ginger plays well into that . The cinnamon too is mild and sweet. This would also be incredible used in a turkey dinner also. Made for Santa's Secret in Photo Tag.
