Foil Wrapped Chicken Tacos

This is quick and easy and oh so yummy for those that want a different take on the usual tacos. I use taco sauce instead of salsa only per preference.

SERVES 4 (change servings and units)

Ingredients

    Preheat oven to 400 degrees.

    Sprinkle chicken with seasoning mix.
  3. 3
    Place 1/2 cup of the potatoes on center of each of 4 large sheets of heavyduty foil.
  4. 4
    Make sure foil is sprayed with cooking spray to prevent sticking.
  5. 5
    Top evenly with chicken, salsa, and cheese.
  6. 6
    Bring foil sides up.
  7. 7
    Double fold top and both ends to seal packet.
  8. 8
    Leave room for heat circulation inside.
  9. 9
    Place on a 10x15 inch baking sheet.

    Bake 30-35 minutes or until chicken is 165 degrees.

    Remove packets from oven and let stand 5 minutes.

    Cut slits in foil to release steam before opening.

    Serve with sour cream or any other toppings.

This is a winner of a recipe! Great taste, easy to prepare with staple ingredients, and healthy too. I used Amazing Taco Seasoning for the seasoning, and didn't use the sour cream. Loved this - thanks for sharing the recipe!

    Ole!!! These are so good and so easy! I think I might try making these and then freezing them, then when you want taco night - thaw and bake! Perfect! Thanks for posting Coffee!

    So simple. I dded just a bit more potato for my husband. One half cup wouldn't do and increased the cooking time accordingly. The chicken came out super juicy. Next time I will add a bit more taco seasoning.

    This was good and really easy to make. I did change up the recipe a bit. I used simply potatoes instead of cutting up my own potatoes. I doubled the rest of the recipe using thin chicken cutlets. I also but everything in one pan and covered with foil and made on the grill. I used taco sauce and not the salsa. Next time I would mix the taco seasoning and taco sauce together before putting it on the chicken. Hubby said he also thought I should have put cheese on top of the potatoes, then the chicken with more cheese. We thought the potatoes didn't get all the flavor that the chicken did. This was really good and we will be making again.
