Foil Envelope Fish

Ingredients

Directions

    Cut tin foil into 12X16 inch rectangle.
  2. 2
    Place green pepper, tomato and green onion on lower half of foil sheet.
  3. 3
    Sprinkle with 1/4 teaspoon basil, salt and pepper.
  4. 4
    Place fish on vegetables.
  5. 5
    Sprinkle with remaining basil, salt and pepper.
  6. 6
    Top with lemon slices.
  7. 7
    Fold upper half of foil over fish and vegetables.
  8. 8
    Double fold edges of foil to make a tight 1/2 inch seal.

    Place foil envelope on baking sheet and bake at 450F for 15 minutes or until envelope puffs.

    To serve, Cut an "X" in top of envelope and fold foil back.

Fluffy this was brilliant! I used salmon fillets and squeezy basil out of a tube, plus drizzled some olive oil over; otherwise followed the recipe exactly. It was aromatic, moist and everyone loved it! Thank you!

    This was great. It only took little time to prepare and cook. I used sea bass and it was very moist. I would use more spices then recomended.

    This recipe was wonderful...I didn't have any good tasting tomatoes, so only used peppers, onions and lemon...we also used lake fish in place of the white fish, and they disappeared in no time...would like to try white fish next time...Thanks for sharing this recipe Fluffy.

    Great recipe! I used tilapia and cooked it on the bbq. It turned out really moist and tasty. Everyone loved it.
