I got this recipe from a Good Housekeeping recipe book years ago and have committed it to memory. My husband loves these and will eat no other kind.

SERVES 2 -4 , 8 pancakes (change servings and units)

Ingredients

Directions

    Mix all dry ingredients together in a bowl (I use a 4 cup measuring cup).
  2. 2
    Mix milk, oil and egg in smaller bowl (I use 2 cup measuring cup).
  3. 3
    Mix liquid ingredients into dry ingredients.
  4. 4
    Make 4 inch pancakes in a medium heated non-stick pan or griddle or use a small amount of oil in regular pan.

    Cook until golden brown.
  6. 6
    Serve with butter and syrup or your favorite topping.

Good pancake recipe, I did do a couple of slight modifications, I used canola oil instead of butter and added 1 tsp of vanilla to the batter to add a bit of flavour. Both DH and DD liked them alot.

    I put the recipe together as written and the batter was extremely runny! I added about a third cup flour and 1/2 tsp baking powder and it was a bit better. The finished pancakes were pretty standard.

    Absolutely my favorite pancake recipe so far. I think it might be the oil instead of melted butter that I like so much. The milk/flour ratio was perfect too. I made these with a gluten-free flour mix and no other changes. Perfect!

    Wonderful pancakes! They came out PERFECT- light and fluffy! I made mine with bluebberries and a yummy blueberry sauce. Yum! I will definately use this recipe in the future! Thank you!
