Another just-in-time recipe. I ttook everything in the kitchen and threw it in a pot, with stunning results. Watch the water level carefully

SERVES 20 , 1 giant pot (change servings and units)

    Melt butter in a maHOOsive saucepan.
  2. 2
    Add onions & red pepper and saute until onions are translucent.
  3. 3
    Add potatoes and stir until well coated in delicious juice.
  4. 4
    Add 2 litres water and spices. Boil until potatoes are soft.
  5. 5
    Add other 2 lt. and rice. Cook rice until soft, adding more water if necessary.
  6. 6
    Once rice is soft, stir in chicken pieces, cashews and chili and cook until chicken is soft.
