These turned out light and fluffy, and had a great taste and texture. I served with warm sugar-free cinnamon syrup. They are a bit high in fat, so may try them with egg substitute, and fat-free half and half next time. Great way to get some flax seed, though! Made for Diabetes Awareness Month Tag.
