A popular "new" cut of steak (Top Blade Steak) that is cheaper and surprisingly more flavorful than the expensive steaks that is gaining popularity in the US. Posted for forum request. Said to be replacing the last steak-cut-fad "the hanger"...from Gourmet Sleuth

SERVES 2 -4 (change servings and units)

    Mix all ingredients thoroughly and marinate steak for one hour.

    Grill over hot coals 4 minutes per side. This steak is best cooked rare to medium rare.

I did not have any red wine so I used red wine vinegar. The flavor was really good. I cut the garlic into chunks to spread around the flavor. I had to use Thyme because I didn't have any Rosemary. I cooked the steak on a griddle on top of my stove- 4 minutes per side. Turned out great.

    I love flat iron steaks, but wasn't super crazy for the marinade. It was very flavorful with the flavor of rosemary, but the other flavors really didn't come through for me. Pretty much any marinade I have ever used on a flat iron steak makes them so super tender, and it did do that which is why I am giving it 3 stars. Not sure if I'll make this exact one again, if I do I might use a little thyme and less rosemary and more salt.

    Yum! I don't have a grill, so I cooked them in a skillet on the stove. Wonderful flavor and oh so rich and tender!

    This is a 10-star recipe! The flavors of the wine, garlic and herbs blended beautifully with the steak. It is a very "elegant" marinade and would be perfect for guest or a romantic evening with your sweetheart. But please don't just save it for a special occasion, it is good enough to be eaten anytime! Thank you for sharing such a great recipe. We really enjoyed it!
