Spicy fried potatoes topped in salsa, cheese, and sour cream.

SERVES 2 (change servings and units)

Ingredients

Directions

    Boil potatoes in salted water until a knife can easily poke through them. Drain into a colander and let them steam off for about 5 minutes.

    Heat oil in a large frying pan over medium to medium high heat and add potatoes.
  3. 3
    Add seasonings to potatoes and cook until they are golden brown and the skins are crispy. About 10 minutes.

    Plate potatoes and top with remaining ingredients.

    Enjoy!

This was great. I used waxy yellow potatoes. I also added a can of black beans to the pan with the potatoes. Finally, I topped each serving with a poached egg. Delicious!

    Try this variation: Before putting all the toppings on, top each serving with a fried egg (I like mine over easy with the yolk a little runny). Then put on the cheese, salsa and sour cream! Makes a great main dish this way!

    I loved these potatoes! I took a shortcut and used thawed hash browns instead of cooking potatoes, otherwise made just as directed - easy and terrific!

    Delicious! These go together very quickly and easily. I added 1/2 tsp cumin to the spices and doubled the salt amount. Also, I used Mexican 4-cheese blend cheese. My family loved these...thank you for sharing.
