Feta Spinach Salmon

This sounds divine and I will be making this next weekend, a low carber's dream, spinach and cheese stuffed salmon. From a low carb chef's posting from Food Network. If desired, you could add roasted red pepper slices to the filling.

SERVES 2 (change servings and units)

Ingredients

Directions

    Preheat oven to 350*.
  2. 2
    In a bowl, combine the cream cheese and feta, mashing and stirring with a fork until well blended.
  3. 3
    Add the scallions and spinach and combine well.
  4. 4
    Spread the 2 pieces of salmon with olive oil, top and bottom.
  5. 5
    Spread the spinach and cheese mixture evenly over one salmon fillet, will be 3/4 inch thick.

    Top with the second salmon fillet, and carefully place in a shallow baking pan.
  7. 7
    Bake for 20 minutes, until easily flaked.

I tried this for the first time last night. I used the garlic herb flavored feta and it was quite tasty. I will make again in the future.

    Great mix of flavors. A little rich though so next time I will use a little less cream and feta cheeses. It's a keeper though.

    one of my alltime favorite salmon recipes. is also excellent on the grill - on top of some heavy duty foil of course. yum!
