This is a great low carb substitute for mashed potatoes! Even my picky kids will eat this great side dish! Very easy and delicious!

SERVES 6 (change servings and units)

Ingredients

Directions

    Steam the head of cauliflower until soft.
  2. 2
    Mash cauliflower and softened cream cheese together or puree in a blender/ food processor if you want it smooth. (We prefer it chunky).
  3. 3
    Adjust to your own taste, or desire for fat intake, or desired creaminess.
  4. 4
    Add salt and pepper if desired.
  5. 5
    Can be prepared with low fat cream cheese as well.

I made this tonight with a low carb salisbury steak recipe and what a perfect side dish! I also added garlic & some colby jack cheese to this recipe and it was a hit! Thank you for sharing KC !

    I was missing mashed potatoes so much, this was a great substitute. I would use a little less cream cheese next time to make it thicker. I also added some bacon bits to the recipe. Yummy!

    Yummy. Not too bad for a low-fat sidedish that only has 73 calories. I added garlic and low fat shredded cheddar cheese and whirled everything together in the food processor. Very easy to put together.

    I LOVE creamed cauliflower! I didn't use cream cheese, so it turned out a little soupier, but the taste was fantastic, especially with a pinch of nutritional yeast for a cheesy taste! This is a great way to get in your veggies and still feel like you're having your comfort starches!
