Recipe #74620 | 1¼ hours | 8 min prep | add private note

This is a fabulously easy pie that looks like you worked really hard! It makes its own crust and can be prepared and in the oven in no time. I found the original recipe in the "More With Less" cookbook and modified it slightly.

SERVES 8 (change servings and units)

Ingredients

Directions

  1. 1
    Preheat oven to 350 degrees.
  2. 2
Spray a 10 inch pie plate with cooking spray and then dust with flour.
  3. 3
(Or grease it and then flour it in your usual method.) In a blender place everything but the coconut.
  4. 4
    Mix until it is blended.
  5. 5
Add the coconut and blend for a few seconds or until it is all mixed.
  6. 6
Pour it into the pie plate and bake for 50-60 minutes.

at this moment, my pie is cooking in the oven, however, i did have about a cup and a half of filling leftover that wouldn't fit into the pie plate... i stuck it in a mug and put it in the microwave for a minute and a half (my microwave is very hot) and it came out perfectly cooked and delicious!!! nice little treat while i'm waiting for the pie to cook!

I made this pie exactly the way it was written. The bottom crust did not cook, so it was a doughy mess. The custard was very thin and the top was too brown. All in all, not a very good pie. I think I will stick with the regular version.
