This is a Paula Deen recipe which has become a favorite in our house. It is a hearty, comfort-food type of meal. The white sauce and potatoes are absolutely delicious. It takes a bit of time to prepare but the results are well worth it! I also like to serve this with a steamed vegetable and/or salad. Enjoy!

SERVES 8 (change servings and units)

Ingredients

White sauce

Chops

Directions

  1. 1
Preheat oven to 350 degrees Fahrenheit.
  2. 2
Peel potatoes, slice 1/4 inch thick and cover with cold water.
  3. 3
Slice onion into very thin slices. Cut slices in half.
  4. 4
    Make The White Sauce:.
  5. 5
    Melt butter; remove from heat.
  6. 6
Stir in flour and add salt and pepper.
  7. 7
Return to heat and cook, stirring constantly, until mixture is bubbly.
  8. 8
Add milk, 1 cup at a time.
  9. 9
Bring to a boil over medium heat, stirring frequently.
  10. 10
Reduce heat and simmer 1 to 2 minutes, then let stand at least 1 to 2 minutes.
  11. 11
Stir in parsley or chives, if desired.
  12. 12
    Drain potatoes.
  13. 13
    Layer half the potatoes in a well-greased 15 x 10 inch casserole dish(I use 9 x 13 and it's fine).
  14. 14
Sprinkle with salt and pepper to taste.
  15. 15
Scatter half of onion slices on top of potatoes.
  16. 16
Repeat with remaining potatoes and onions.
  17. 17
    Cover potatoes with white sauce.
  18. 18
Cover casserole dish with plastic wrap and microwave for 5 minutes on high OR bake uncovered for 15 minutes.
  19. 19
Mix together flour and seasoned salt and dredge pork chops in flour mixture.
  20. 20
Lightly brown chops in vegetable oil. *Do not cook them completely*.
  21. 21
As chops are removed from frying pan, lay them on top of the potatoes.
  22. 22
Bake at 350 degrees fahrenheit for 45-60 minutes.
  23. 23
The juices from the pork chops will drip down into the potatoes and taste oh-so-yummy!

Good quick homey food. I microwaved the spuds for 10 min. so that I didn't have to bake the chops so long. Mine are generally done in 30 min. I also scaled the recipe back for 2 as it was just us two for dinner.

First I must say that I'm very pleased to be the very first one to review this wonderful recipe.Second, since there was only my SO and I,the recipe was scaled down to feed just us.I cut out the step to cover the sliced potatoes with cold water,I just peeled, sliced and placed them into a baking dish that was sprayed with butter-flavored cooking spray.I used a very small vidalia onion, thinly sliced and seperated into rings and placed over the potatoes.I really didn't know what to do with the remaining amount seasoning salt after cut the recipe down, so I just sprinkled it over the chops as I was browning them.Since I had cut the recipe down,I finished baking them for about 30 minutes and that seemed like the perfect amount of time.Served with Buttery Bread Machine Rolls and peas & carrots, made a perfect "comfort meal".This will be a definite repeat at our home.Thank you for posting and "Keep Smiling "

This is really good family style food. It's like a potato bake with pork chops on top! I tried to use lean chops and drained and blotted any fat from the top. I think it's important to semi cook your potatoes first. I didn't and needed to zap them in the microwave for a few minutes just to finish them off. Had I left them in the oven, the chops would have dried out. Great meal and enjoyed by all the family. I have lots of leftovers which I think I will turn into a pie for tomorrow nights dinner. Thanks
