Family Favorite Oatmeal Pancakes

This recipe was from an old church cookbook and is a favorite breakfast treat in our family-kids and dad!

20 -30 pancakes (change servings and units)

Ingredients

2 cups milk
1 1/2-2 cups rolled oats
2 eggs
1/4 cup oil
3/4 cup flour
2 tablespoons sugar
2 1/2 teaspoons baking powder
1 teaspoon salt

Directions

Pour milk over oats and let stand 2-5 minutes.

Beat in eggs, oil, then remaining ingredients.

Mixture will be thin.

Fry on hot griddle.

Serve with honey butter (equal parts of honey and butter beaten until smooth), or favorite topping.

I LOVE this recipe. They are very filling and last in the tummy a very long time. A great breakfast for when you have a long day. I always eat it with peanut butter and bananas. I always use 2 cups oatmeal and I use 1 cup flour (1/2 cup white & 1/2 cup whole wheat.) THANK YOU for posting this recipe.

The kids couldn't decide if they wanted oatmeal or pancakes...they got both and everyone was happy! I don't even especially like pancakes but I loved these. They have a wonderful chewy, nutty taste and texture and the whole house smells like oatmeal muffins while they're cooking. Very filling, too. I added a little ground flax and cinnamon, which added an extra richness. I had huckleberry syrup on mine and it was good enough for dessert. (Looks like everyone likes the fruit on top!) I think next time I may try subbing applesauce for the oil...lower fat and the flavors would blend well. I have a feeling we'll be having this a lot - thanks!

I loved this recipe!!! These pancakes are really stick-to-the-ribs winter fare gooooood!! Tried the honey butter spread but do you know what was wonderful on these? Date with a Rhubarb spread! Bergy, Date with a Rhubarb It was almost a dessert!!! Sinfully delicious!! Wonderful stuff!!!
