Family Favorite Meatloaf

The only meatloaf my family will eat - delicious!!

SERVES 6 (change servings and units)

Ingredients

  • 2 lbs ground beef

  • 1 (10 1/2 ounce) can condensed vegetable beef soup, undiluted
  • 1 egg
  • 1/4 cup breadcrumbs

Directions

  1. 1
    Preheat oven to 350 degrees.
  2. 2
    Drain the sauce from the vegetables/pasta of the vegetable-beef soup and reserve.
  3. 3
    In a large bowl, stir together the egg, vegetables/pasta from the soup, and breadcrumbs.
  4. 4
    Add the ground beef and mix until well blended.
  5. 5
    Shape meat mixture into a rounded loaf shape and place in a baking dish.
  6. 6
    Pour reserved sauce from soup over the loaf.
  7. 7
    Bake, uncovered, at 350 degrees for 1 hour.

This makes a nice moist meat loaf. I did add some onions and I used rolled oats in place of the bread crumbs (which is what I always use)

    This was very good and easy. I would have liked a little more spice, but a good overall basic recipe. I would have never thought about putting soup in meatloaf. The only problem I had, was that my soupo didn't have any liquid on top. So I just topped it with BBQ sauce.
