Fajita Style One-Dish Chicken Dinner

I made this one up one night while digging through the refrigerator for dinner. Everyone I've ever made it for just raves about it! One of my all time favorite dishes.

SERVES 2 -3 (change servings and units)

Ingredients

Directions

    Chop chicken breast into chunks.
  2. 2
    Fry chicken quickly until almost cooked through.
  3. 3
    Remove chicken from pan.
  4. 4
    Cook peppers for 2-3 minutes.
  5. 5
    Put chicken back in pan with peppers.
  6. 6
    Add fajita seasoning and 1/4 cup water.
  7. 7
    Cook until chicken is done.
  8. 8
    Put mixture over rice and top with grated cheese.

Very easy and very tasty - it just needed more veggies in my household. I added sweet white onion cut in large chunks and mushrooms. I cooked it completely without oil in a non-stick pan. This is a great weeknight dinner that is easy on the waistline. Thanks for posting!

    I loved, loved, loved this. Very easy and tasty too. I added a yellow onion because I can't imagine a fajita without onion. We tried it in tortillas and just over rice and I preferred the over rice style. I will double this next time because it was so good.

    Delicious! I have made this quite a few times already, but had yet to review it. We love this -kids especially. I made the recipe as posted, then I put brown rice in the bottom of a glass casserole dish, spread the fijita mixture on top and sprinkled with cheese. Then I put it in the oven for about 10-15 min while we get the table ready. (melts the cheese) To serve we rolled it up into flour tortillas served with guacamole, salsa, and sour cream. My kids love it this way. I have substituted green peppers and it was fine. Thanks for a great recipe!

    Instead of serving this over rice i served it over a salad with some salsa and sour cream. Otherwise I made this as directed. It turned out delish and was so easy to make. Thanks for the great recipe, I will be making this one again!
