Fabulous Fat-Free Fruit Sorbet

This is such a wonderful summertime treat! I have used all kinds of fruit combinations in this; use your imagination. Far richer and intense in flavour than anything you can buy, and yet it's almost all just healthy fruit. The fruits that work best have a fairly smooth fleshy texture; things like mangoes, muskmelons, peaches, apricots, and bananas. But also good are strawberries, pineapple, blueberries and the like. Seedy or watery fruits can be used, but it is best to use them mixed with something that has a smoother denser texture, and to use less of them. Cook time is tempering time, but prep time does not include freezing time.

SERVES 6 (change servings and units)

Ingredients

  • 4 cups prepared fruit, pieces
  • 2-4 tablespoons sugar
  • 1/2 small lemon, juice of
  • 1/2 small lime, juice of

    Prepare the fruit by peeling, if necessary, and cutting it into chunks.

    Place on a plate or tray covered with plastic wrap.

    Make sure everything is as spread out as possible.

    Cover with more plastic wrap.

    Freeze overnight.

    Whiz the fruit through a food processor until very finely chopped.

    Add the sugar and lemon juice, adjusting either according to the sweetness and acidity levels of the fruit you are working with; if you use pineapple use orange juice or water instead of lemon or lime juice and add a little vanilla extract if it seems appropriate.

    Feel free to taste the mixture!

    Blend thoroughly, until very smooth. Scrape down the sides of the food processor regularly.

    This may take up to five minutes.

    Spoon into serving dishes or a covered storage tub and return to the freezer until dessert time.

    Put in the fridge to temper 15 minutes before serving.

This is an easy way to make sorbet! I made mango and banana sorbet. I forgot that my food processor didn't work so I used the blender and skipped to step two as that way they blended together easier. I also used organic sugar which made it fat-free and sugar-free sorbet! Thanks for a great recipe!

    YUM-O!!! I used strawberries, banana, stevia, and fresh orange juice (with a splash of vanilla). Oh wow. Very yum. Thanks!

    This was so good! I love Italian ices and this was better! I used pineapple and orange this time, but will try mango, banana and strawberries soon! Thanks for posting this!

    Recipes so scrumptious really just don’t come any easier than this. Fabulously clear instructions inviting one into the whole magical world of homemade sorbets which are – from the first one I made totally superior to what’s available in commercial brands! And to be able to make this without buying an extra appliance I absolutely don’t have room for in the kitchen: just so exciting! I made a blackberry and strawberry sorbet and, like Susang, I added no sugar. Very easily done, for me: I really don’t like overly sweet foods. I unreservedly recommend this recipe as an over-the-top five-star recipe plus. When you’re trying to watch calories and fat – I made this for the post ZWT Healthy for the Holidays Challenge – how amazing to be able to eat something like this which has such negligible fat content! I look forward to exploring the many possibilities that this recipe offers. Thank you so much, Jenny, for sharing an absolute gem of a recipe!
