This is cute and very easy to make. I generally make it with black olives instead of the pimento stuffed ones.

SERVES 12 (change servings and units)

Ingredients

Directions

  1. 1
Cut through hard cooked egg in half.
  2. 2
    Scoop out yolk.
  3. 3
Place cooked yolk in a bowl and mash with a fork.
  4. 4
Stir in mayonnaise, paprika and salt to taste.
  5. 5
Mix thoroughly and fill egg white eye socket with mixture.
  6. 6
    Smooth yolk mixture.
  7. 7
Press olive into yolk mixture so pimento is facing out.
  8. 8
Cut just enough of the rounded end of egg to create a flat surface to stand egg on.
  9. 9
    Serve upright.
