Eye Opening Salmon Sandwiches

This sandwich has some kind of kick! If you add extra mayo or sour cream, you've got a great salmon dip for crackers.

SERVES 2 -3 (change servings and units)

Ingredients

Directions

    In a mixing bowl, combine the salmon, mayo, hot sauce, lemon juice, capers and chives.
  2. 2
    Have ready 3 slices of pumpernickel bread; place 1/3 of the salmon mixture on each slice of bread.
  3. 3
    Top each with a lettuce leaf, then remaining slice of bread.
  4. 4
    Note that a milder hot sauce can be used, but increase the amount then.
  5. 5
    Dark rye bread is a great substitute for the pumpernickel.

I hardly ever use canned salmon. For some reason, I just don't think of it. This recipe has been in my lunch cookbook for quite a while and I decided to try it. The filling had an understated zesty little kick. I think I could have handled a little more Tabasco and/or pepper for a slightly more pronounced bite. This was great on pumpernickel bread. Thanks for a new brown bag idea.

    Great sandwich! I often eat salmon doused with sriracha, so this was right down my alley. When I started to make the filling, I realized my chives weren't as fresh as I would have liked, so I subbed green onions. Not being afraid of heat, I used plenty of Tabasco's habanero version. I also added some freshly ground black pepper. Sure glad I doubled the recipe, because my husband and I really loved it--thanks for posting!

    This is now my "new favorite" sandwhich. I really like salmon, and all the flavors mixed together on fresh rye bread is absolutely scrumptious!! Hope your well Lennie, thanks for the greaty sandwhich.

    Well, I cranked up the bread machine this morning, making some rye bread. I got on Zaar to see if I could find a simple idea for sandwishes for an easy supper. Your salmon fit the bill! I had everthing in except chives so I used green onion. It's a keeper! Thanks.
