I threw this together for lunch because I was tired of making sandwiches. It was really easy to make and my kids loved it. You can substitute different toppings or cheeses with whatever you have around the house.

SERVES 2 -4 (change servings and units)

Ingredients

Directions

    Preheat oven to 350 degrees.
  2. 2
    Lay 2 tortillas side by side on a greased cookie sheet.
  3. 3
    Mix shredded cheddar and monterey jack and cover tortillas. Then place the other two tortillas on top.
  4. 4
    Spread tomato sauce on.( I recommend Ragu Chunky Mushroom spaghetti sauce).
  5. 5
    Cover with mozzerella and toppings.
  6. 6
    Bake at 350 for 5 to 10 minutes. Watch these closely as ovens vary. They are done when all of the cheese is melted.

This was delicious. I made it in my toaster oven as my oven was cooking a ham but other then that followed the directions exactly. thank you

    What a great twist on quesadillas. Since there is cheese in the middle, I only sprinkled a tiny amount on the top, and for the meat topping, I used chopped proscuitto. And I broiled after baking to brown the top. Delicious and very easy. Thanks Luci2!

    Made these today for the AFL grand final - everyone enjoyed them. I cut them into bite size, followed the recipe exactly but didn't add Monterey Jack Cheese because it's not available in my region. I didn't get to eat them because of my diet, but they vanished off the plate. Thank you Luci2
