You will never believe these are low fat. Your kids will never know that you're hiding whole wheat flour in this. Only your love handles will be disappointed! This is adapted from my Everything Nice Coconut Oatmeal Cookies which are amazingly good cookies but now you can have them with only 4 tablespoons (!) of butter.

24 -36 cookies (change servings and units)

Ingredients

Directions

    Cream together butter and sugar.
  2. 2
    Add eggs and applesauce.
  3. 3
    Add remaining ingredients except for the chocolate chips.
  4. 4
    Mix well.
  5. 5
    Add chocolate chips just until well combined.
  6. 6
    Chill for twenty minutes.
  7. 7
    Drop by spoonfuls onto a parchment lined cookie sheet leaving space for cookies to expand.

    Bake in a 350 oven for about 10 minutes or when nicely browned.

I made these cookies for teacher appreciation week and they turned out very good. I did not use coconut and added about an extra cup of oats. These cookies turned out very soft and kinda bulky (not flat). I'll definitely keep this recipe on hand.

    These cookies are really delicious, and it's great to know they are made of such healthy ingredients with only 4 tablespoons of butter. There was a small goof in the ingredients list (no eggs), but I added 2 eggs and the cookies were outstanding.

    Yikes! These have 10g of fat per cookie and are loaded with saturated fat! How could these ever be considered "low fat." It's a great cookie but these should not be labelled low fat.
