English Cucumber Salad With Balsamic Vinaigrette

From British Foods, this is a new way to fix cucumbers (at least to me it's new!)

SERVES 4 (change servings and units)

Ingredients

    For the Dressing:.

    Add rosemary, vinegar, and olive oil to a small saucepan. Heat for approximately 5 minutes over very low heat to blend and intensify flavors. Remove from heat. Whisk in the Dijon mustard.

    Slice the cucumber into very thin slices. Place into a pretty bowl. Pour dressing over cucumber slices and toss to mix. Refrigerate until ready to serve.

    Serves 4.

This recipe got a variety of ratings from my family - everything from 3 to 5 so I'll give it a solid 4. The one who gave it a 3 simply doesn't care for balsamic vinegar (I know - how weird is that?!) I added in sliced green onion and sliced radish which went nicely with all the flavours.

    My guests and I loved this simple salad. The balsamic vinaigrette was lovely with the mustard, olive oil and fresh, finely cut rosemary. The rosemary lent a very special flavor and was not overpowered by the other strong flavors.

    This was very good. The dressing will do much more than 1 cucumber.. and that's great. Will try with tomatoes another time. Heated the dressing in the microwave. The dressing did not overpower the cucumbers. I preferred just dribbling the dressing over instead of stirring and marinating.

    This is a new and different cucumber salad, and it is really good! The marinade smells so wonderful while it simmers. (I added a pinch of sugar to my marinade). I used regular (homegrown)cucumbers. Thanx for a great new cucumber salad. I'll fix this again.
