Eggplant Curry "no-Fry" Sri Lankan Style Using Coconut

I used ground Ancho Chili Pepper to make this. Made a half batch so I can use with Easy Enchiladas from the 1-2-3 Hit Wonders game that I am making tonight. One of the spices I did not care for but it is still a good recipe. Maybe if I used regular chili powered I might have liked it better. Made for Zaar Tag game 2007
